Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the sweet potatoes.
- Prepare Sweet Potatoes: Chop the sweet potatoes into bite-sized cubes. Toss them with 1 tablespoon of olive oil, salt, and pepper, then spread evenly on a baking sheet lined with parchment paper.
- Roast Sweet Potatoes: Place the baking sheet in the oven and roast the sweet potatoes for 25-30 minutes until they are golden brown and tender, flipping halfway if desired for even cooking.
- Season Chicken: While the sweet potatoes roast, season the chicken breasts with the remaining 1 tablespoon of olive oil, salt, pepper, and any preferred spices.
- Cook Chicken: Grill or pan-sear the chicken breasts over medium heat for about 6-7 minutes per side until fully cooked and juices run clear.
- Glaze Chicken with BBQ Sauce: Brush the cooked chicken breasts generously with BBQ sauce. Continue cooking for a few more minutes on the grill or pan to let the sauce caramelize and develop a sticky, flavorful coating.
