Description

Creamy Marry Me Chicken Pasta is a rich and flavorful dish featuring tender seared chicken breasts cooked in a luscious garlic and Parmesan cream sauce, tossed with fettuccine pasta and fresh spinach. This comforting meal comes together in just 35 minutes, perfect for a satisfying weeknight dinner.

Ingredients

Scale

Chicken and Seasoning

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 3 cloves fresh garlic, minced

Pasta and Sauce

  • 8 oz fettuccine pasta
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. Prep ingredients: Finely chop the garlic cloves to prepare for sautéing.
  2. Sear chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then sear them in the hot skillet until golden brown, about 6-7 minutes per side. Remove the chicken from the skillet and set aside.
  3. Sauté garlic and seasoning: In the same skillet, add the minced garlic and Italian seasoning. Sauté for about 1 minute until fragrant but not browned.
  4. Make sauce: Pour in the chicken broth and use a spatula to scrape up any browned bits from the bottom of the pan. Stir in the heavy cream and allow the mixture to simmer gently until it slightly thickens.
  5. Add pasta and spinach: Stir in the cooked fettuccine pasta and fresh spinach into the sauce. Cook together while stirring until the spinach wilts, about 2-3 minutes.
  6. Finish with cheese: Remove from heat and stir in the freshly grated Parmesan cheese until melted and well combined. Return the chicken to the skillet or serve alongside the creamy pasta.

Notes

  • For best results, cook the fettuccine pasta separately according to package instructions before adding it to the sauce.
  • Use freshly grated Parmesan cheese for a creamier and more flavorful sauce.
  • You can substitute spinach with kale or arugula if preferred.
  • If you want a thicker sauce, continue to simmer gently until desired consistency is reached.
  • Adjust seasoning with salt and pepper at the end to taste.
