Ingredients
Scale
Chicken and Seasoning
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 3 cloves fresh garlic, minced
Pasta and Sauce
- 8 oz fettuccine pasta
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach
Instructions
- Prep ingredients: Finely chop the garlic cloves to prepare for sautéing.
- Sear chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then sear them in the hot skillet until golden brown, about 6-7 minutes per side. Remove the chicken from the skillet and set aside.
- Sauté garlic and seasoning: In the same skillet, add the minced garlic and Italian seasoning. Sauté for about 1 minute until fragrant but not browned.
- Make sauce: Pour in the chicken broth and use a spatula to scrape up any browned bits from the bottom of the pan. Stir in the heavy cream and allow the mixture to simmer gently until it slightly thickens.
- Add pasta and spinach: Stir in the cooked fettuccine pasta and fresh spinach into the sauce. Cook together while stirring until the spinach wilts, about 2-3 minutes.
- Finish with cheese: Remove from heat and stir in the freshly grated Parmesan cheese until melted and well combined. Return the chicken to the skillet or serve alongside the creamy pasta.
Notes
- For best results, cook the fettuccine pasta separately according to package instructions before adding it to the sauce.
- Use freshly grated Parmesan cheese for a creamier and more flavorful sauce.
- You can substitute spinach with kale or arugula if preferred.
- If you want a thicker sauce, continue to simmer gently until desired consistency is reached.
- Adjust seasoning with salt and pepper at the end to taste.
