Description

This Chicken with Spinach and Mushrooms in Creamy Parmesan Sauce is a rich, flavorful skillet dish combining tender chicken breasts, sautéed mushrooms, fresh spinach, and a luscious creamy Parmesan sauce. Perfect for a comforting weeknight dinner, it’s both gluten-free and low-carb, offering a satisfying and elegant meal with simple ingredients.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil

Sauce and Vegetables

  • 2 tablespoons unsalted butter
  • 8 oz mushrooms, sliced
  • 3 cups fresh spinach
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon crushed red pepper flakes (optional)

Garnish

  • 1/4 cup chopped fresh parsley

Instructions

  1. Season the Chicken: Season the chicken breasts evenly on both sides with salt, pepper, and garlic powder to prepare them for cooking.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5 to 6 minutes per side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
  3. Sauté Mushrooms: In the same skillet, melt the unsalted butter. Add the sliced mushrooms and sauté them for 5 to 6 minutes until they are browned and tender.
  4. Add Garlic and Spinach: Stir in the minced garlic and cook for an additional 1 minute until fragrant. Add the spinach and cook until it wilts, approximately 2 minutes.
  5. Make the Cream Sauce: Reduce the heat to medium-low. Pour in the heavy cream, then stir in the grated Parmesan cheese and crushed red pepper flakes if using. Let the sauce simmer for 2 to 3 minutes until it thickens slightly.
  6. Combine and Warm Through: Return the cooked chicken breasts to the skillet. Spoon the creamy sauce over the chicken and cook for another 2 minutes to warm everything through.
  7. Garnish and Serve: Sprinkle the chopped fresh parsley over the dish for garnish. Serve hot alongside your choice of pasta, mashed potatoes, or crusty bread.

Notes

  • Serve this dish with pasta, mashed potatoes, or crusty bread for a complete meal.
  • You can substitute chicken thighs for chicken breasts if preferred.
  • Spinach can be swapped for kale for a different green.
  • For a lighter sauce, use half-and-half instead of heavy cream.
