Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
Sauce and Vegetables
- 2 tablespoons unsalted butter
- 8 oz mushrooms, sliced
- 3 cups fresh spinach
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon crushed red pepper flakes (optional)
Garnish
- 1/4 cup chopped fresh parsley
Instructions
- Season the Chicken: Season the chicken breasts evenly on both sides with salt, pepper, and garlic powder to prepare them for cooking.
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5 to 6 minutes per side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
- Sauté Mushrooms: In the same skillet, melt the unsalted butter. Add the sliced mushrooms and sauté them for 5 to 6 minutes until they are browned and tender.
- Add Garlic and Spinach: Stir in the minced garlic and cook for an additional 1 minute until fragrant. Add the spinach and cook until it wilts, approximately 2 minutes.
- Make the Cream Sauce: Reduce the heat to medium-low. Pour in the heavy cream, then stir in the grated Parmesan cheese and crushed red pepper flakes if using. Let the sauce simmer for 2 to 3 minutes until it thickens slightly.
- Combine and Warm Through: Return the cooked chicken breasts to the skillet. Spoon the creamy sauce over the chicken and cook for another 2 minutes to warm everything through.
- Garnish and Serve: Sprinkle the chopped fresh parsley over the dish for garnish. Serve hot alongside your choice of pasta, mashed potatoes, or crusty bread.
Notes
- Serve this dish with pasta, mashed potatoes, or crusty bread for a complete meal.
- You can substitute chicken thighs for chicken breasts if preferred.
- Spinach can be swapped for kale for a different green.
- For a lighter sauce, use half-and-half instead of heavy cream.
