Ingredients
Scale
For the French Toast
- 8 slices of thick bread (such as brioche or Texas toast)
- 4 large eggs
- 1/2 cup milk
- 1/2 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 2 tbsp butter, for cooking
For the Cheesecake Filling
- 8 oz (225g) cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup fresh strawberries, chopped
For Serving
- 1/2 cup fresh strawberries, sliced
- Whipped cream
- Maple syrup or powdered sugar for serving
Instructions
- Make the cheesecake filling: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy. Gently fold in the chopped strawberries and set the mixture aside.
- Prepare the French toast batter: In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon until fully combined.
- Assemble the stuffed French toast: Spread the cheesecake filling evenly onto 4 slices of bread. Top each with the remaining slices to form sandwiches.
- Cook the French toast: Heat a large skillet or griddle over medium heat and melt 1 tablespoon of butter. Dip each sandwich into the egg mixture, coating both sides thoroughly. Place them on the hot skillet and cook for 2–3 minutes per side, or until golden brown and cooked through. Repeat with the remaining sandwiches, adding more butter as needed.
- Serve: Top the cooked French toast sandwiches with fresh strawberry slices, a dollop of whipped cream, and a drizzle of maple syrup or a light dusting of powdered sugar for an extra touch of sweetness.
Notes
- Use thick slices of bread such as brioche or Texas toast to hold the filling without falling apart.
- Ensure the cream cheese is softened for easier mixing and a smoother filling.
- Dip sandwiches thoroughly in the egg mixture to achieve a golden crust but avoid soaking the bread too long to prevent sogginess.
- Butter or a non-stick spray can be used to prevent sticking during cooking.
- This recipe can be prepared a day ahead by assembling the sandwiches and refrigerating, then cooking fresh in the morning.
