Ingredients
Scale
Ingredients
- 2 lbs baby potatoes
- 3 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp sea salt
- ½ tsp freshly cracked black pepper
- Fresh herbs (optional, for garnish)
Instructions
- Wash the potatoes: Thoroughly rinse the baby potatoes under cold running water to remove any dirt or debris.
- Boil the potatoes: Place the potatoes in a pot of salted water and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes. Drain the potatoes and allow them to cool slightly.
- Smash the potatoes: Arrange the boiled potatoes on a lined baking sheet. Gently smash each potato using a potato masher or the bottom of a glass to flatten slightly, but not so much that they fall apart.
- Season the potatoes: Drizzle the extra virgin olive oil over the smashed potatoes. Sprinkle evenly with garlic powder, sea salt, and freshly cracked black pepper. Toss gently to coat all pieces uniformly.
- Air-fry the potatoes: Preheat your air fryer to 400°F (200°C). Place the seasoned smashed potatoes in a single layer inside the air fryer basket. Cook for 12-15 minutes, or until the potatoes turn golden brown and crisp on the edges.
- Garnish and serve: Optionally, sprinkle fresh herbs over the crispy smashed potatoes to add a burst of color and flavor before serving.
Notes
- Boiling the potatoes until fork-tender ensures they smash easily without falling apart.
- You can use any fresh herbs like parsley, chives, or rosemary for garnish.
- For extra crispiness, flip the potatoes halfway through air frying.
- If you don’t have an air fryer, these can be baked in a preheated 425°F oven for about 20-25 minutes.
- Adjust seasoning to taste; adding a pinch of smoked paprika can add a lovely smoky flavor.
