Ingredients
Scale
Hot Honey
- 1/3 cup / 110g Honey
- 1 1/2 tsp Hot Sauce (e.g., Frank’s or Cholula)
- 3/4 tsp Chilli Flakes
Chicken and Coating
- 2 x 250g / 9oz Chicken Breasts
- 2 tsp Paprika
- 1 tsp Salt
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Dried Oregano
- 1/4 tsp Cayenne Pepper
- Freshly ground Black Pepper, to taste
- 35g / 1/4 cup Plain Flour
- 2 Eggs, beaten
- 65g / 1 cup Panko Breadcrumbs
- Vegetable Oil, as needed (6-8 tbsp)
Topping
- 200g / 7oz Feta, crumbled
Instructions
- Prepare the Hot Honey: Combine the honey, hot sauce, and chilli flakes in a microwave-safe bowl. Microwave for about 20 seconds until warmed, then stir well to infuse the chili flavor. Alternatively, gently simmer the mixture in a small pot on the stove, then remove and let it cool. Set aside to allow the chili flakes to infuse fully.
- Prepare the Chicken: Horizontally slice each chicken breast to create four even pieces. In a small bowl, mix together paprika, salt, onion powder, garlic powder, dried oregano, cayenne pepper, and freshly ground black pepper to create your seasoning mix.
- Set up Dredging Stations: Arrange three shallow dishes for coating. In the first dish, combine the plain flour with half of the seasoning mixture. In the second dish, beat the eggs thoroughly. In the third dish, mix the panko breadcrumbs with the remaining seasoning.
- Coat the Chicken: Dredge each chicken piece first in the seasoned flour, ensuring an even coating. Then dip into the beaten eggs, allowing excess to drip off, and finally coat thoroughly with the seasoned panko breadcrumbs. Place the coated pieces on a tray and repeat for all chicken.
- Fry the Chicken: Heat enough vegetable oil in a large skillet over medium-high heat until a breadcrumb sizzles upon contact. Fry the chicken pieces in batches if necessary, cooking for 3-4 minutes on each side until they are golden brown and crisp. Transfer the fried chicken to a wire rack set over a paper-towel-lined tray to drain excess oil.
- Add Feta and Grill: Evenly distribute the crumbled feta cheese over each crispy chicken piece. Place the chicken under a hot grill or broiler set to high for 2-3 minutes, or until the feta begins to turn golden and slightly crispy.
- Serve: Drizzle the infused hot honey generously over the feta-topped chicken. Serve immediately with your preferred sides to enjoy a deliciously spicy-sweet meal.
Notes
- Make sure the oil is hot enough before frying to ensure a crispy coating; test with a breadcrumb first.
- The chicken pieces should be sliced evenly to cook uniformly.
- You can adjust the amount of hot sauce and chili flakes in the honey to suit your preferred spice level.
- For a healthier version, you can use an oven to bake the chicken instead of frying, though it won’t be as crispy.
- Serving suggestions include side salads, steamed vegetables, or rice for a complete meal.
