Description

Instructions

  1. Heat the oil and cook chicken: Heat the olive oil in a large skillet over medium-high heat. Meanwhile, season the chicken pieces with salt, pepper, and paprika. Add the diced zucchini and corn kernels, season with a pinch of salt and pepper, and sauté for 4–5 minutes until the vegetables become tender but still vibrant.
  3. Combine and finish: Return the cooked chicken to the skillet and toss everything together to combine the flavors. Drizzle the dish with fresh lemon juice and sprinkle with chopped parsley for freshness. Serve warm immediately.
