Coconut Yogurt

  • 450g coconut yogurt

Fruit and Flavorings

  • 5 kiwis, peeled and diced
  • ½ lime, zested
  • 3 mint sprigs, leaves picked and chopped
  • 20g pomegranate seeds
  • 1 tablespoon clear honey (optional)


Instructions

  1. Strain the Yogurt: Line a fine sieve with 2 sheets of kitchen paper or a square of muslin. Place the sieve over a small bowl and pour in the coconut yogurt. Refrigerate for 4 hours to allow excess moisture to drain off, making the yogurt thicker and creamier.
  2. Prepare the Kiwi Mixture: In a blender, purée half of the diced kiwi until smooth. Fold the kiwi purée into the strained coconut yogurt along with the lime zest, gently mixing to combine. Discard any liquid collected in the bowl during the straining process.
  3. Assemble the Parfait: In small glasses (about 150ml each), layer the yogurt mixture alternately with the remaining diced kiwis. Sprinkle chopped mint leaves on top of each layer of diced kiwi. Finish by garnishing with pomegranate seeds and a drizzle of honey if desired.
