Description

These Mardi Gras Beef Sausage Sandwiches combine flavorful Andouille or smoked beef sausage with sautéed bell peppers and onions seasoned with Cajun spices. Served on toasted hoagie rolls with a zesty Creole mustard-mayo spread and melted provolone cheese, these sandwiches deliver a perfect balance of spicy, savory, and tangy flavors for a satisfying main course inspired by Cajun/Creole cuisine.

Ingredients

Scale

Sausage and Vegetables

  • 1 pound beef sausage links (such as Andouille or smoked beef sausage)
  • 1 tablespoon olive oil
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 1 teaspoon Cajun seasoning

Sandwiches

  • 4 hoagie or sandwich rolls
  • ¼ cup mayonnaise
  • 1 tablespoon Creole mustard
  • 1 teaspoon hot sauce (optional)
  • 4 slices provolone cheese

Instructions

  1. Sauté peppers and onions: Heat olive oil in a large skillet over medium heat. Add the sliced green and red bell peppers along with the sliced yellow onion. Sprinkle with Cajun seasoning and cook, stirring occasionally, until the vegetables are soft and slightly caramelized, about 8 to 10 minutes.
  2. Cook the sausage: While the vegetables cook, grill or pan-sear the beef sausage links in a separate skillet over medium heat until browned on all sides and heated through, about 8 minutes. Turn occasionally to ensure even cooking.
  3. Prepare the sandwich spread: In a small bowl, combine mayonnaise, Creole mustard, and hot sauce (if using). Mix well to create a flavorful sandwich spread.
  4. Toast rolls and assemble sandwiches: Slice the hoagie rolls open and toast them lightly if desired for added texture. Spread the mustard-mayo mixture generously inside each roll. Place one cooked sausage link into each roll, then top with the sautéed peppers and onions. Finish by adding a slice of provolone cheese on top while the sandwich is still warm to allow the cheese to melt slightly.
  5. Serve hot: Serve the sandwiches immediately while warm for the best flavor. Pair with Cajun fries or coleslaw for a complete meal.

Notes

  • Swap provolone cheese for pepper jack if you prefer a spicier kick.
  • These sandwiches pair wonderfully with Cajun fries or a side of crunchy coleslaw.
