- 1 pound lean ground beef
Vegetables
- 1 small red onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 zucchini, halved and sliced
- 1 cup cherry tomatoes, halved
Other Ingredients
- 1/4 cup kalamata olives, pitted and sliced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon crushed red pepper flakes
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped
- Juice of 1/2 lemon
- Optional: crumbled feta cheese for topping
Instructions
- Heat the oil and cook beef: Heat olive oil in a large skillet over medium heat. Add the lean ground beef and cook until browned, breaking it apart as it cooks, about 5–7 minutes. Drain excess grease if needed.
- Sauté onion and garlic: Add the diced red onion and minced garlic to the skillet and sauté for 2 minutes until fragrant and softened.
- Cook vegetables: Stir in sliced red bell pepper and zucchini, cooking for another 5 minutes until the vegetables are just tender.
- Add tomatoes, olives, and spices: Mix in cherry tomatoes, kalamata olives, dried oregano, ground cumin, crushed red pepper flakes, salt, and black pepper. Cook for an additional 3–4 minutes, stirring occasionally to combine flavors.
- Finish with fresh herbs and lemon: Remove the skillet from heat and stir in the chopped fresh parsley and lemon juice to brighten the dish.
- Serve and garnish: Optionally top with crumbled feta cheese and serve warm alongside your choice of rice, quinoa, or couscous.
