Description

  • 1 pound lean ground beef

Vegetables

  • 1 small red onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, halved and sliced
  • 1 cup cherry tomatoes, halved

Other Ingredients

  • 1/4 cup kalamata olives, pitted and sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1/2 lemon
  • Optional: crumbled feta cheese for topping


Instructions

  1. Heat the oil and cook beef: Heat olive oil in a large skillet over medium heat. Add the lean ground beef and cook until browned, breaking it apart as it cooks, about 5–7 minutes. Drain excess grease if needed.
  2. Sauté onion and garlic: Add the diced red onion and minced garlic to the skillet and sauté for 2 minutes until fragrant and softened.
  3. Cook vegetables: Stir in sliced red bell pepper and zucchini, cooking for another 5 minutes until the vegetables are just tender.
  4. Add tomatoes, olives, and spices: Mix in cherry tomatoes, kalamata olives, dried oregano, ground cumin, crushed red pepper flakes, salt, and black pepper. Cook for an additional 3–4 minutes, stirring occasionally to combine flavors.
  5. Finish with fresh herbs and lemon: Remove the skillet from heat and stir in the chopped fresh parsley and lemon juice to brighten the dish.
  6. Serve and garnish: Optionally top with crumbled feta cheese and serve warm alongside your choice of rice, quinoa, or couscous.
