Instructions

  1. Cook the rice: In a medium saucepan, bring the water or chicken broth to a boil. Add the rice and a pinch of salt. Reduce heat to low, cover, and simmer for 25-30 minutes (or according to package instructions) until the rice is cooked and liquid absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
  2. Prepare the roasted veggies: Preheat the oven to 400°F (200°C). On a baking sheet, toss chopped bell pepper, zucchini, and carrot with olive oil, garlic powder, dried oregano, salt, and pepper. Spread in an even layer. Roast for 20-25 minutes until tender and lightly browned, stirring halfway through.
  3. Cook the ground turkey: While rice and veggies cook, heat olive oil in a large skillet over medium-high heat. Add ground turkey and break apart with a spoon.
