Shrimp and Vegetables

  • 1 lb large shrimp (peeled and deveined)
  • 1 bunch asparagus (trimmed and cut into 2-inch pieces)
  • 1 cup sliced mushrooms (shiitake or cremini)
  • 3 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)

Sauce and Oils

  • 2 tbsp vegetable oil
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 1/4 tsp black pepper

Instructions

  1. Prepare Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, sesame oil, and cornstarch slurry. Set this mixture aside to use later as the stir-fry sauce.
  2. Cook Shrimp: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2–3 minutes until they turn pink and are just cooked through. Remove the shrimp from the pan and set aside to prevent overcooking.
  3. Stir-Fry Aromatics: Add the remaining 1 tablespoon of vegetable oil to the pan. Stir-fry the minced garlic and grated ginger for about 30 seconds until fragrant, being careful not to burn them.
  4. Cook Vegetables: Add the asparagus pieces and sliced mushrooms to the pan. Stir-fry for 4–5 minutes, stirring frequently until the vegetables are tender-crisp, retaining some crunch and freshness.
  5. Combine and Finish: Return the cooked shrimp to the pan. Pour in the prepared sauce and stir everything well to coat. Cook for an additional 1–2 minutes until the sauce thickens and everything is heated through.
  6. Serve: Garnish with sesame seeds or chopped green onions if desired, and serve immediately with steamed rice or noodles for a complete meal.

Notes

  • Asparagus can be substituted with snap peas or broccoli for a different vegetable twist.
  • For added heat and flavor, include a dash of chili garlic sauce or red pepper flakes during the stir-fry.
  • To make this dish vegetarian, replace shrimp with firm tofu and use vegetarian oyster sauce or additional soy sauce.
