Description

A vibrant and hearty Mexican breakfast skillet featuring eggs cooked in a flavorful black bean and fire-roasted tomato sauce, served on warm corn tortillas and garnished with fresh avocado, queso fresco, cilantro, and lime for a perfect start to your day.

Ingredients

Scale

Base and Sauce

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 jalapeño, seeded and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 can (14 oz) diced tomatoes, fire-roasted preferred

Eggs and Toppings

  • 4 large eggs
  • 4 small corn tortillas
  • 1/4 cup crumbled queso fresco
  • 2 tablespoons chopped fresh cilantro
  • 1 avocado, sliced
  • Lime wedges for serving

Instructions

  1. Sauté Aromatics: Heat the olive oil in a large skillet over medium heat. Add the diced onion, minced garlic, and diced jalapeño. Sauté for 3 to 4 minutes until the vegetables are softened and fragrant.
  2. Add Spices and Beans: Stir in the drained black beans, ground cumin, smoked paprika, salt, and pepper. Cook for another 2 to 3 minutes, allowing the flavors to meld.
  3. Simmer Sauce: Pour in the diced tomatoes with their juices. Let the mixture simmer gently for 5 to 7 minutes until it thickens slightly, forming a flavorful base for the eggs.
  4. Cook Eggs: Create four small wells in the simmering sauce and carefully crack one egg into each well. Cover the skillet and cook for 5 to 7 minutes, or until the eggs reach your preferred level of doneness.
  5. Toast Tortillas: While the eggs cook, lightly toast the corn tortillas in a dry pan or over a gas flame until warmed through and slightly charred for added flavor.
  6. Assemble and Serve: Place each toasted tortilla on a plate. Spoon a generous portion of the huevos rancheros mixture, including the eggs and sauce, on top. Garnish with crumbled queso fresco, chopped fresh cilantro, sliced avocado, and a squeeze of lime. Serve immediately.

Notes

  • For an extra spicy kick, add hot sauce or your favorite salsa when serving.
  • To make the meal more filling, consider serving with a side of rice or refried beans.
