Eggs and Toppings
- 4 large eggs
- 4 small corn tortillas
- 1/4 cup crumbled queso fresco
- 2 tablespoons chopped fresh cilantro
- 1 avocado, sliced

Instructions
- Sauté Aromatics: Heat the olive oil in a large skillet over medium heat. Add the diced onion, minced garlic, and diced jalapeño. Sauté for 3 to 4 minutes until the vegetables are softened and fragrant.
- Add Spices and Beans: Stir in the drained black beans, ground cumin, smoked paprika, salt, and pepper. Cook for another 2 to 3 minutes, allowing the flavors to meld.
- Simmer Sauce: Pour in the diced tomatoes with their juices. Let the mixture simmer gently for 5 to 7 minutes until it thickens slightly, forming a flavorful base for the eggs.
- Cook Eggs: Create four small wells in the simmering sauce and carefully crack one egg into each well. Cover the skillet and cook for 5 to 7 minutes, or until the eggs reach your preferred level of doneness.
- Toast Tortillas: While the eggs cook, lightly toast the corn tortillas in a dry pan or over a gas flame until warmed through and slightly charred for added flavor.
