Description

This Soft Scramble and Roasted Sweet Potato Plate is a delicious and nutritious breakfast or brunch option that combines creamy, gently cooked scrambled eggs with caramelized roasted sweet potatoes. Enhanced with spices and fresh garnishes like avocado and herbs, it offers a wholesome and satisfying meal that’s easy to prepare and perfect for meal prep.

Ingredients

Scale

Sweet Potatoes

  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Egg Scramble

  • 4 large eggs
  • 2 tablespoons milk or cream
  • 1 tablespoon butter
  • 1/4 teaspoon turmeric (optional, for color)

Garnishes

  • 1 avocado, sliced
  • 1/4 cup crumbled feta or goat cheese (optional)
  • Chopped fresh herbs (such as chives or parsley) for garnish

Instructions

  1. Preheat and Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper until evenly coated. Spread them out on a baking sheet in a single layer. Roast for 25 to 30 minutes, stirring once halfway through, until they are tender and have caramelized edges.
  2. Prepare Egg Mixture: While the sweet potatoes are roasting, crack the eggs into a mixing bowl. Add the milk or cream and turmeric if using, then whisk together thoroughly until the mixture is smooth and fully blended.
  3. Cook Soft Scrambled Eggs: Heat the butter in a nonstick skillet over low heat. Pour in the egg mixture and gently stir continuously with a silicone spatula, scraping the pan’s bottom as the eggs slowly cook. Continue stirring until soft curds form and the eggs are just set but still creamy, roughly 5 to 7 minutes. Remove the pan from heat to prevent overcooking.
  4. Assemble the Plate: Arrange the roasted sweet potatoes on serving plates. Top with the soft scrambled eggs, then garnish with sliced avocado, crumbled cheese if using, and fresh chopped herbs for added flavor and color. Serve warm.

Notes

  • Turmeric adds a beautiful golden hue and subtle earthy flavor to the eggs.
  • For extra nutrition, consider adding sautéed greens such as spinach or kale to the scramble.
  • This recipe scales easily and is excellent for meal prepping multiple servings.
