Instructions

  1. Prepare the Bread: Butter one side of each slice of bread evenly to ensure a golden, crispy exterior when grilled.
  2. Assemble the Sandwiches: Lay 4 slices of bread butter-side down on a clean surface. Evenly layer cheddar and Monterey Jack cheeses over the bread. Add a generous portion of chopped brisket atop the cheese. Drizzle with 1/4 cup of barbecue sauce, then add red onion slices and pickled jalapeños if using. Sprinkle remaining cheese on top of the fillings and cover each with another slice of bread, butter-side up.
