This One-Pot Spicy Gochujang Alfredo Pasta combines creamy Parmesan Alfredo sauce with the bold, spicy kick of Korean gochujang for a quick and flavorful meal. Ready in just 20 minutes, this comforting pasta dish simmers all the ingredients together in a single pot, making cleanup a breeze. Perfect for those who love a fusion twist on classic Italian pasta.

Ingredients

Scale

Primary Ingredients

  • 12 oz fettuccine or pasta of choice
  • 1 tbsp olive oil or butter
  • 4 cloves garlic, minced
  • 2 cups milk (whole or 2%)
  • 1 cup heavy cream
  • 1/4 cup gochujang (adjust to taste)
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1/4 tsp red pepper flakes (optional for extra spice)
  • 1/2 cup reserved pasta water (as needed)

Garnish

  • Chopped scallions or parsley, for garnish

Instructions

  1. Sauté Garlic: In a large pot or deep skillet, heat olive oil or butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  2. Add Liquids and Gochujang: Pour in the milk and heavy cream, then add the gochujang. Stir everything to combine and bring the mixture to a light simmer.
  3. Cook Pasta: Add the uncooked pasta directly into the pot. Stir to coat the noodles in the sauce. Let it simmer for 10–12 minutes, stirring frequently to prevent sticking, until the pasta is al dente and the sauce thickens. Add reserved pasta water as needed to loosen the sauce to your desired consistency.
  4. Finish Sauce: Stir in the grated Parmesan cheese. Season with salt, black pepper, and red pepper flakes if using, adjusting the spice to your preference.
  5. Serve: Serve the pasta immediately, garnished with chopped scallions or parsley to add a fresh, herby note.

Notes

  • You can substitute fettuccine with your favorite pasta type such as penne or linguine.
  • Adjust the amount of gochujang and red pepper flakes according to your spice tolerance.
  • If the sauce becomes too thick, add reserved pasta water little by little to loosen it.
  • This recipe is easily adaptable to be made dairy-free by using plant-based milk and cheese alternatives.
  • Make sure to stir frequently while pasta cooks to prevent burning or sticking at the bottom of the pot.
