These Spinach & Feta Pastry Rolls are an easy and savory puff pastry recipe perfect for a snack or appetizer. For the Filling

  • 300 g fresh spinach (or 200 g frozen, thawed and drained)
  • 200 g feta cheese, crumbled
  • 1 egg
  • 1 garlic clove, finely grated
  • ½ tsp dried oregano
  • Black pepper, to taste

For the Pastry

  • 1 sheet puff pastry (250275 g), thawed if frozen
  • 1 egg yolk + 1 tbsp milk (for egg wash)
  • Optional: sesame seeds or nigella seeds for topping


Instructions

  1. Cook the Spinach: Sauté the spinach in a dry pan over medium heat until wilted. Remove from heat, let it cool, then chop the spinach finely.
  2. Prepare the Filling: In a mixing bowl, combine the chopped spinach with crumbled feta cheese, whole egg, finely grated garlic, dried oregano, and black pepper. Mix thoroughly to blend all flavors.
  3. Roll Out Pastry: On a floured surface, roll out the puff pastry into a large rectangle. Spread the spinach and feta filling evenly over half of the pastry sheet.
  4. Fold and Cut: Fold the other half of the puff pastry over the filling, pressing gently to seal. Cut the folded pastry into 3–4 cm wide strips. Twist each strip or roll into logs as desired.
  5. Prepare for Baking: Place the shaped rolls on a parchment-lined baking sheet. Brush them generously with the mixture of egg yolk and milk to create an egg wash. Sprinkle with sesame seeds or nigella seeds if using.
  6. Bake: Preheat the oven to 200°C (390°F). Bake the pastry rolls for 20–25 minutes until they are puffed up and golden brown.
  7. Serve: Let the rolls cool slightly, then serve warm or at room temperature. Enjoy as a tasty snack or appetizer.

  • If using frozen spinach, be sure to thaw and squeeze out all excess water before using to avoid soggy pastry.
