Description

Celebrate St. Patrick’s Day with these festive and delicious cake pops! Made from your favorite cake mix and coated in a vibrant green white chocolate shell, these bite-sized treats are perfect for parties or festive gatherings. Easy to assemble and decorate with sprinkles, they bring joy and a pop of color to any celebration.

Ingredients

Scale

Cake Base

  • 1 box of cake mix (any flavor, vanilla or chocolate recommended)
  • Ingredients required for cake mix (usually water, eggs, and oil)

Frosting Filling

  • ½ cup unsalted butter, softened
  • 1 ½ cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp heavy cream or milk
  • Green food coloring (gel or liquid)

Coating and Decoration

  • 1 ½ cups white chocolate chips or candy melts
  • 1 tbsp coconut oil (to thin the coating)
  • Green sprinkles or rainbow-colored sprinkles for decorating
  • 12-15 cake pop sticks or lollipop sticks

Instructions

  1. Prepare the Cake: Follow the instructions on the cake mix box to bake the cake using recommended quantities of water, eggs, and oil. Bake completely and allow the cake to cool completely before proceeding.
  2. Crumble the Cake: Once cooled, crumble the cake into a large bowl, breaking it into fine crumbs for easy mixing with the frosting filling.
  3. Make the Frosting Filling: In a separate bowl, beat together the softened unsalted butter, powdered sugar, vanilla extract, and 2 tablespoons of heavy cream or milk until smooth and creamy. Add green food coloring a drop at a time until desired vibrant shade is achieved.
  4. Combine Cake and Frosting: Gradually mix the frosting filling into the cake crumbs, using your hands or a spoon, until the mixture is moist enough to hold its shape when rolled into balls. Add more cream if needed to achieve consistency.
  5. Shape Cake Pops: Roll the mixture into approximately 1.5-inch diameter balls and place them on a baking sheet lined with parchment paper. Insert a cake pop stick halfway into each ball. Chill the cake pops in the refrigerator for at least 30 minutes or until firm.
  6. Prepare the Coating: In a microwave-safe bowl, melt the white chocolate chips or candy melts with the coconut oil in 20-30 second intervals, stirring well between each interval until smooth and fully melted.
  7. Dip Cake Pops: Remove the cake pops from the refrigerator. Dip each cake pop into the melted coating, ensuring it is fully covered. Gently tap off any excess coating.
  8. Decorate: Immediately sprinkle the coated cake pops with green or rainbow-colored sprinkles before the coating sets.
  9. Set and Serve: Place the decorated cake pops back on the parchment-lined tray and allow the coating to harden completely at room temperature or in the refrigerator before serving.

Notes

  • Use gel food coloring for more vibrant colors without thinning your frosting.
  • Chilling the cake pops before dipping helps prevent them from falling off the sticks.
  • If the coating thickens too much while dipping, gently reheat it in short bursts in the microwave.
  • For a stronger vanilla flavor, add ½ teaspoon of vanilla extract to the melted coating.
  • Wrap cake pops individually for gifting or transporting to parties.
