Description

Delight in these fudgy and chewy strawberry brownies made from a strawberry cake mix, enhanced with fresh strawberries and white chocolate chips. Topped with a smooth, sweet glaze, they make an easy and irresistible pink dessert perfect for any occasion.

Ingredients

Scale

Brownie Batter

  • 1 box strawberry cake mix (about 15.25 oz)
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 cup chopped fresh strawberries (optional)
  • 1/2 cup white chocolate chips (optional)

Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1–2 drops red or pink food coloring (optional)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or lightly grease it to prevent sticking.
  2. Mix Batter: In a large bowl, combine the strawberry cake mix, eggs, and vegetable oil until a thick batter forms. Fold in the chopped fresh strawberries and white chocolate chips if you choose to include them.
  3. Bake Brownies: Spread the batter evenly in the prepared pan. Bake for 20–25 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.
  4. Cool Brownies: Remove from the oven and let the brownies cool completely in the pan to ensure the glaze adheres well.
  5. Prepare Glaze: In a small bowl, whisk together the powdered sugar, milk, vanilla extract, and food coloring if using, until you achieve a smooth consistency.
  6. Glaze and Set: Drizzle or spread the glaze over the cooled brownies evenly. Allow the glaze to set before slicing the brownies into squares.

Notes

  • These brownies have a fudgy and chewy texture rather than cakey.
  • Omit fresh strawberries for a smoother texture or use freeze-dried strawberries to add crunch.
  • Store brownies in an airtight container at room temperature for up to 3 days.
